  • 250g plain flour
  • 2 large eggs
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • Pepper (to season)
  • 200ml milk
  • 150ml buttermilk
  • 6 rashers streaky bacon
  • 100g Black Bomber (finely grated)
  • Maple syrup


  • 1. Mix all dry ingredients together in a large bowl.
  • 2. Whisk eggs, milks and 50g cheese with pepper in a large jug.
  • 3. Gradually add liquid to flour mixture, whisking constantly until you have a smooth batter.
  • 4. Cook pancakes in a greased heavy bottomed pan. Using a small ladle, pour mixture into hot pan.
  • 5. Sprinkle each pancake with some crumbled bacon and cheese. Cook until set and then flip over to cook other side.
  • 6. Serve immediately with maple syrup drizzled over each pancake.
